Pinot Noir permeated the South African wine scene when it was first introduced in the latter half of the 20th century. This light bodied red wine is limited to selected wine farms and regions, primarily Elgin and Walker Bay, as it is a hard grape to grow properly. When Pinot Noir is perched proudly atop suitable terroir, it is a very rewarding grape and so too is the wine.

Mystique Pork Medley: A Perfect Paring.
Indulge in this grilled pork dish, paired harmoniously with our Myst Pinot Noir. The succulent pork, seared to perfection and glazed with a strawberry jam is complemented by creamy mashed potatoes, charred lemony vegetables, and sweet macerated cherries. This perfect pairing is a symphony of flavors - elevated by our Myst's velvety notes with each sip.

Ingredients
Serves 4

 1 bottle Myst Pinot Noir 2022
500ml Milk
250ml Cream
100g butter
1 tsp. Ground Cardamom
1/2 tsp. Ground Nutmeg
3 kg of Potatoes
4 sprigs of thyme
1 sprig of Rosemary
1 bunch of Parsley
125 g Broccoli
200 g Courgette
2 Lemons
2 Garlic cloves
2 tbsp. Strawberry jam
2 tbsp. Hot Water
4 Pork Tenderloins
300 g Cherries, pitted
200 g of Brown sugar
½ tsp. Rosewater
3 sprigs Mint
Salt and Black Pepper

  1. Open your bottle of Myst Pinot Noir to breathe. 
  2. Peel and boil the potatoes in a pot with 2 tablespoons of salt.
  3. Once tender, drain and place potatoes back in the pot.
  4. In a saucepan, heat up milk, cream, butter, cardamom, nutmeg and black pepper. Once warmed, pour into the potatoes, and mash.
  5. Prepare the broccoli and courgettes and season with salt, black pepper and a healthy pour of olive oil
  6. Add lemon zest, grated garlic, lemon juice, thyme, rosemary and parsley to the vegetables.
  7. Cook the veg in a pan until a nice char has developed, but still with a crunch.
  8. Pit the cherries and cut into halves. Add the sugar and rosewater and mix with the cherries
  9. Season the pork with salt, black pepper and olive oil
  10. Heat a pan once hot, place the pork in the pan and leave until a nice crust has formed (approx 1 minute and 30 seconds)
  11. Stir together the strawberry jam and the hot water to form the glaze.
  12. Turn the heat down to medium and turn the pork over. Cook for 3 minutes. Glaze the pork with the strawberry glaze.
  13. After 3 minutes turn the pork over again and cook for a further 3 minutes. Continue to glaze the pork with the strawberry jam glaze.
  14. Once cooked, take out the pork place on a dish and allow to rest for 5-10
  15. Assemble the mash potatoes, charred vegetables and pork tenderloin on a place.
  16. Drizzle the macerated cherries in and around the protein, and vegetables, allowing the juices from the cherries to pattern their way around the dish. Top with chopped fresh mint.
  17. Enjoy while sipping a glass of Myst Pinot Noir!

Pinot Noir is a very adaptable wine, which lends it a wonderful authenticity when it comes to food pairings. For the best flavour pairings with Myst, skin-on chicken thighs, salmon fillets, and eggplant steaks, can be used as substitutions to suit your personal preference.
